Butternut Squash and Chickpea Curried Stew

Okay, seriously….I am in love with squash and sweet potato recipes.  I am literally overtaking The Paisley Kitchen with these ingredients.  But, whatevah.

The following recipe could be an amazing crock pot pot luck meal for an upcoming Friendsgiving or holiday get together.  Not only is it super easy and a “fix it before you go meal,” it is hearty with great flavor AND is vegetarian.

So….back to this stew….This recipe literally makes an entire crock pot full, so if you don’t plan on eating it all week long, you may want to rethink the amount of ingredients.  I’m not sure how well it would freeze, but if you try it….please let me know!

Butternut Squash and Chickpea Curried Stew

What You Will Need:

  • 2 cans of chickpeas
  • 1-2 pounds of chopped butternut squash
  • 1 can of coconut milk
  • 1 bag of frozen peas
  • 1/2 bag of organic baby spinach
  • 1 small onion, diced
  • 1 can of diced tomatoes
  • 3 cups of veggie broth
  • 2 tablespoons of curry powder
  • 1 tablespoon of turmeric
  • 1 tablespoon of cumin
  • 1 tablespoon of oregano
  • salt and pepper to taste
  • 2 cloves of garlic, minced
  • (optional) cilantro for serving
  • (optional) unsweetened shredded coconut for serving
  • (optional) Greek yogurt for serving

What You Will Need to Do:

  1. Throw everything in the crock pot and cook on LOW for 6-8 hours EXCEPT for the spinach and frozen peas
  2. After you get home from a grueling day at work, toss the spinach and peas in and let cook for about 30 more minutes.
  3. Enjoy your easy peas-y (get it) dinner.  Fix it and forget.  I like it.

Again, a GREAT holiday pot luck meal that tastes fantastic and is sure to be a hit.
